Carrot Orange Nut Muffins

Butter (to grease muffin tins)
2 eggs
1/2 C frozen OJ concentrate
3 TBS olive oil
1/4 C sour milk
1-1/2 C grated carrot
1/2 C chopped nuts
1/2 C raisins
1-1/4 C whole wheat flour
1/4 C wheat germ
2 TBS lecithin granules
2 TBS oat bran
1 tsp cinnamon
1 TBS grated orange rind
1/2 tsp ginger
2 tsp baking soda

-combine all ingredients in bowl, and fill tins. Bake for 15 minutes in a 375 degree oven.
